10 raw cactus paddles, cleaned (about 1 pound)
3 Tablespoons olive oil
½ cup chopped onions
1 garlic clove minced
¼ cup chopped cilantro
2 teaspoons dried Mexican oregano
3/4 teaspoon kosher salt
1 tomato, cored and sliced
1 avocado, sliced

Method/Steps:
Preparation: Rinse the nopales (cactus paddles), clean them and cut them into thin strips, and set them aside.

Procedure: In a hot sauté pan, add the oil and sauté the onions until translucent. Add the garlic and sauté for one minute, stirring frequently. Add the nopales (cactus paddles) and stir. Then, add the cilantro and oregano. Add the salt and let the nopales cook in medium heat for approximately 20 minutes, stirring frequently, or until there is no liquid and they are starting to brown. Serve immediately with tomatoes and avocado slices as a warm salad or side dish.
