Pastel De Nopal (Cactus Paddle Cake) Recipe |

Serves 12
Ingredients:
3 medium cactus paddles (nopales), cleaned and sliced
5 eggs
1 cup corn or vegetable oil
1¼ cup sugar
1/2 teaspoon almond extract
2 cups Aunt Jemima pancake mix
Method/Steps:
Preparation: Preheat oven to 400ºF for about 10 minutes.
Make Cactus Mixture: In a blender, put in the cactus paddles, eggs, corn oil, sugar, and almond extract and blend until well mixed. In a large bowl, pour the cactus mixture and add the pancake flour. Fold gently until flour is integrated into the mixture. Don’t over mix or it will make the cake tough.
Bake Mixture: Grease a mold standard bunt pan and pour mixture into the mold. When you set the mold into the oven, reduce the temperature to 200ºF and bake for 45 minutes.
