4 pounds sweet potatoes or yams, peeled
1/2 cup olive oil
Kosher salt and freshly ground pepper
1/4 cup lime juice
Pre-heat oven to 425°F.
Prepare Sweet Potatoes: Cut sweet potatoes length-wise in quarters. Toss in olive oil, salt and pepper.
Roast Sweet Potatoes: Roast until tender, about 25 minutes. Remove from oven and let cool slightly.
Serve: Drizzle with lime juice and season to taste with salt and pepper. Serve immediately.
