Indian-Spiced Lamb Burgers with Raita Recipe

Ingredients

Lamb Burgers:
2 1/2 pounds ground lamb
5 cloves garlic, minced
1/2 cup minced yellow onion
1/4 cup minced ginger
1/3 cup cilantro, chopped
1/3 cup basil, chopped
1/3 cup mint, chopped
2 teaspoons ground coriander
1/2 teaspoon turmeric
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon black pepper
2 teaspoons kosher salt
30 Parker House rolls (or small soft rolls)

Raita:
1 cup Greek yogurt
1 small garlic clove, minced
1 teaspoon kosher salt
1 medium cucumber, peeled and seeded
1/2 carrot, peeled1/4 cup fresh mint leaves, chopped
1/4 cup cilantro leaves, chopped
1 teaspoon cumin seeds, lightly toasted
1/2 teaspoon paprika
1/4 teaspoon freshly ground pepper
1/4 teaspoon cayenne
2 teaspoons lemon zest
Juice from 1 lemon

Methods/Steps

Preheat oven to 400°F. 

Make Burgers:  In a medium bowl combine all of the ingredients (except for the rolls) and mix well. Form into 2” patties, making about 30.  Place patties onto greased sheet pans, about 1 in. apart. Cook patties in oven for 8-10 minutes, or until medium rare, 135-140ºF.

Make Raita: In a medium bowl, mix together the Greek yogurt, garlic and salt. On a box grater over another bowl, grate the peeled carrot and cucumber with the large holes. Squeeze out excess moisture, roughly chop and add to yogurt mixture. Add all remaining ingredients and stir until combined. Chill raita until ready to use. The flavors will come together and the spices can intensify as the raita sits, so be sure to check for seasoning just before serving.

Serve: Place patties on mini buns and top with raita.
