Cranberry Marmalade (Makes about 1 cups):
1 cinnamon sticks
1/2 cup orange juice
1/2 cup sugar
1/2 teaspoon kosher salt
1 cups fresh or frozen cranberries
Burgers:
1 1/2 pounds ground turkey (not breast meat, use thigh meat)
1/2 teaspoon sage, finely chopped
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 Tablespoons mayonnaise
16 Hawaiian sweet dinner rolls (can substitute Parker rolls) Thick cut salted potato chips for garnish
Baby sage leaves or chopped sage for garnish
Preheat oven to 375ºF.
Make Marmalade: Place the cinnamon stick, orange juice, sugar, salt and cranberries into a medium saucepan, stir to combine. Over high heat, bring to a boil, stirring to dissolve the sugar. Once boiling, reduce the heat to medium and simmer until the cranberries start to pop and thicken, about 15-20 minutes.
Cool Marmalade: Pick out the cinnamon sticks and place marmalade into a bowl set over an ice bath and stir until cooled down. Place into the refrigerator until ready to use.
Mix and Form Patties: In a medium bowl, combine the ground turkey, sage, salt, pepper and mayonnaise. Stir until incorporated. Using a 2-inch ice cream scoop, gently divide the meat mixture into equal portions. Using your thumb, flatten the patty and make a small dimple in the middle. Place on a parchment lined sheet pan.
Cook Burgers: Heat a nonstick grill pan over medium-high heat. Sear burgers 1-2 minute a side, until golden. Transfer partially cooked burgers onto a sheet pan. Once all of the burgers have been seared, transfer to the oven to finish cooking, about 6 minutes or until a thermometer inserted into the middle of the burger registers at 160 degrees.
Toast Buns: Cut buns in half and place cut side down on the hot grill until light brown.
Assemble Sliders: Put a teaspoon of marmalade on the bottom half of bun. Place a burger on top, a potato chip, and then another teaspoon of marmalade. Garnish with a small sage leaf or chopped sage. Place other half of the bun on top. Serve immediately.
